Lemon Curd Ice-Cream Cake

Chocolate Raspberry Crumb Coffee Cake

Cake:
1 Box- Chocolate Chip Muffin Mix
(ingredients on your muffin mix box)
1 Container- Fresh Raspberries
Topping
Flour
Sugar
Butter (Cold)

1/2 Cup- Extra Chocolate Chips (optional)
Sliced Almonds (optional)

In large mixing bowl, mix Ingredients for muffin mix, fold in raspberries in gently and set cake mixture aside. In small mixing bowl, mix flour and sugar together, cut COLD butter into cubes and use a fork to cut it into the sugar mixture until it crumbles. Pour cake mixture into baking pan (I used a square glass pyrex dish) grease pan to ensure cake release. Smooth out cake mixture and sprinkle on the crumb topping. OPTIONAL- save a few raspberries, chocolate chips, and almonds to sprinkle on top to make a pretty presentation. Bake according to the muffin mix. ( I did 350 for about 35 mins) Time will vary to your own oven.
